One of the things I haven't managed to do yet is the headlight covers. When they're up, the gap between bottom of headlight and the panel isn't enough, but I haven't adjusted the headlights, and the panel can't be adjusted 🤔

Anything I'm missing? I'd rather leave them off for now if it means anything major

Wow you’ve come a long way with this car, well done.

I had a similar problem with my headlamp bezels catching the front panel. IIRC it just took a bit of strong arm fettling of the front panel framework and headlamp mounts. Another way may be to increase the size of the screw holes that the front panel bolts through, to give a little wriggle room. Factory tolerances were approximate, so a little mechanical adjustment is allowed.... :lol:

Looking good :D The light mountIng brackets have lots of adjustment.
