The bigger the valves, the harder it is to get inserts to stay in (they have been know to fall out on standard ones). If only doing 3000 miles a year, it's going to be a long time before it becomes an issue but if you want some peace of mind, something like Millers CVL. Tank-based lead/zinc/unicorn ...

How did the pickup look? Any signs of a hairline crack (normally where the bracket is)?

Chances of 2 gauges being equally duff is very slim to be honest.

I can think of a couple of reasons for them, but only to hide other issues (misalignment on fitting or to allow movement during operation but IMHO they're normally issues with mountings, be they exhaust or engine/gearbox). Maybe to allow "something" to move during operation to prevent cracking? That...
